Soup and Popovers for Dinner

We are hearing whispers of snow (a four letter word in April) for later this week – that calls for a warm and easy meal with everyone on the go and after school activities.

When my friends hear me say the word ‘popovers’ they say “No way – I could never make those.” but you can and it’s easier than you think.

I love the idea of making soup and popovers from scratch – my grandmother taught me how, but after a full day of family commitments and being ‘on the go’ – I wanted comfort food for the family but needed something that required little prep.

Here are 2 items I keep in the pantry for just this type of occasion: King Arthur Traditional Popover Mix and Bear Creek Creamy Potato Soup Mix.

This soup only requires you to add water and the popovers just need a few ingredients, eggs, butter and water – pretty simple stuff that even I usually have on hand.

The soup is easy to doctor up to make it just the way YOU like it – add some crumbled bacon, shredded cheese, sour cream or chives – add as little or as much as you like – the soup comes together in 15 minutes.

The popovers take a bit more attention and time – but the end result is delicious. Make sure you let the batter sit at room temperature for 30 minutes (that can be tricky, but without letting the batter rest the popovers will come out flat).

Dinner Is Served!

The calendar says Spring but the thermostat said something all together different – this soup combo really hit the spot!
